Ingredients
1 ½ cupall purpose flour180 g
½ cupunsalted butter, softened113 g
½ cupsugar100 g
¼ cuppowdered sugar28 g
1ealarge eggroom temperature
1eaegg yolkroom temperature
1tbspvanilla extract
½ tspbaking powder
½ tspfine sea salt
½ cupwhite chocolate morselsplus extra for topping, optional
⅓ cupsprinkle jimmiesplus extra for topping, optional
6-8golden Oreos, choppedplus extra for topping, optional
Instructions
Combine flour, baking powder and fine sea salt in bowl and whisk. Set aside.
In a separate bowl, add butter, both sugars and vanilla. Whisk on medium high until well creamed - about 2 to 3 minutes.
Add egg and mix on medium high until well combined.
Add egg yolk and mix on medium high until well combined.
Add dry ingredients to wet ingredients and whisk on low until just combined.
Add chopped golden Oreos, rainbow sprinkles and white chocolate chips to batter.
Use rubber spatula to fold ingredients into batter.
Use 2 tablespoon cookie scoop to scoop cookies and place on baking sheet at least 3" apart.
Top with additional golden Oreos and sprinkles.
Preheat oven to 350 F.
Bake for 13 to 14 minutes, or until edges are lightly browned and tops of cookies look almost baked.
Remove from oven and place on wire rack to cool. Allow to cool completely before enjoying.
Notes
Weigh Your Ingredients. While I do share the volume measurements, I always will recommend a kitchen scale.Room Temperature Ingredients. Make sure to have the butter and eggs at room temperature before beginning. This helps ensure they all mix in well.Sprinkles. I recommend using sprinkle jimmies (little rods) for the sprinkles that are mixed in with the dough.Make this a chocolate sprinkle cookie by substituting the white chocolate chips for semi-sweet chocolate chips, and the golden Oreos for chocolate Oreos.make them mini sprinkle cookies by scooping 1 tablespoon of batter vs. 2. The bake time might vary so keep an eye on them!
