Pre-Baking Tips
Weigh Your Ingredients. While I do share the volume measurements, I always will recommend a kitchen scale. It drastically eliminates errors in measuring and will get you closest to how the recipe was intended.
Room Temperature Ingredients. Make sure to have the butter and eggs at room temperature before beginning. This helps ensure they all mix in well.
Sprinkles. I recommend using sprinkle jimmies (little rods) for the sprinkles that are mixed in with the dough.
Variations & Substitutions
- Make this a chocolate sprinkle cookie by substituting the white chocolate chips for semi-sweet chocolate chips, and the golden Oreos for chocolate Oreos. They will be just as tasty - promise!
- You can make them mini sprinkle cookies by scooping 1 tablespoon of batter vs. 2. The bake time might vary so keep an eye on them!
- Or make them even larger and stuff with an Oreo cookie! Scoop about 1 ½ tablespoons of cookie batter, flatten between your palms, place an Oreo in the middle and then add another 1 ½ tablespoons of cookie batter to the top. Roll between your hands to seam the ends well and bake 3 to 4 per sheet. Add about 2 - 3 minutes of bake time to ensure they get baked all the way through.
Ingredients

Butter. I use unsalted butter, but you can use salted butter. Just omit the fine sea salt.
Eggs. Two eggs but we only use one whole egg, and the other egg we use the yolk. Adding the extra yolk will help create a softer and more tender cookie.
Sugars. Granulated sugar and powdered sugar (also known as confectioners sugar) are used in the recipe. The powdered sugar contains corn starch (if not using organic) and this will help soften the cookie.
Vanilla. Imitation vanilla or pure vanilla will do fine here.
Sprinkles. I recommend using rainbow jimmies (the little rods) only, preferably a US brand as they do not tend to bleed into the cookie batter.
White Chocolate Chips. For added flavor I recommend adding these into the batter. You can easily substitute with semi-sweet chocolate chips if you'd like.
Golden Oreos. Another flavor enhancer for the cookie. You can also opt to use chocolate Oreos, or Teddy Grahams!
Let's Make Birthday Cake Cookies
These soft sprinkle cookies use baking tools and ingredients that can be found in most homes. Please see recipe card for full list of equipment and ingredients.
Step 1. Combine flour, baking powder and fine sea salt in bowl and whisk. Set aside.
Step 2. In a separate bowl, add butter, both sugars and vanilla. Whisk on medium high until well creamed - about 2 to 3 minutes.
Step 3: Add egg and mix on medium high until well combined.
Step 4: Add egg yolk and mix on medium high until well combined.
Step 5: Add dry ingredients to wet ingredients and whisk on low until just combined.
Step 6: Add chopped golden Oreos, rainbow sprinkles and white chocolate chips to batter.
Step 7: Use rubber spatula to fold ingredients into batter.
Step 8: Use 2 tablespoon cookie scoop to scoop cookies and place on baking sheet at least 3" apart.
Step 9: Top with additional golden Oreos and sprinkles. Preheat oven to 350 F.
Step 10: Bake for 13 to 14 minutes, or until edges are lightly browned and tops of cookies look almost baked.
Step 11: Remove from oven and place on wire rack to cool. Allow to cool completely before enjoying.
Storage
Pre-Bake Storage. Wish to make now and bake later? Simply follow the recipe up until baking. Place in airtight container or ziplock bag and place in refrigerator for 1 week. When ready to bake just follow next steps. You can also freeze them in a freezer safe airtight container or freezer safe ziplock container for up to 3 months. Bake straight from the freezer and add 1 - 2 minutes of bake time.
Post Bake Storage. You can store in an airtight container or ziplock bag for up to 3 days after baking at room temperature. You can also store in the refrigerator for up to 2 weeks. Freeze for up to 3 months. When ready to eat, defrost by removing from freezer and allowing to sit on counter overnight.
